These Spinach & Feta Puff Pastry Rolls are a perfect snack, appetizer, or side dish. Crispy, cheesy, and full of flavor, they are easy to make with simple ingredients and a little prep.

Ingredients

  • 10 oz fresh spinach
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 egg (for filling)
  • Salt, to taste
  • ½ teaspoon black pepper
  • 89 g ricotta cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 package puff pastry sheets (pre-rolled)

Instructions

  1. Prepare the Filling
    Heat olive oil in a pan, add garlic, and sauté briefly. Add the spinach and cook until wilted. Remove from heat, allow to cool, then mix with ricotta, mozzarella, Parmesan, salt, and black pepper. Add 1 egg to bind the filling.
  2. Assemble the Rolls
    Roll out the puff pastry sheets. Spread the spinach and feta mixture evenly. Roll the pastry into a log shape, sealing the edges to prevent filling from spilling. Slice into individual rolls.
  3. Bake the Rolls
    Preheat the oven to 375°F (190°C). Place the rolls on a lined baking sheet and brush the tops with a little beaten egg for a golden finish. Bake for 20–25 minutes or until golden brown and puffed.
